In the instance of a flat tire, is it more dangerous with a single axle? Is there less fish-tailing/swaying with a double?
Is it harder to maneuver a double axle?
Pros? Cons? of each?

If you have a flat tire you should stop and change it and not drive on it no matter what axle combo you have.
Single Axle Pros:
Less rolling resistance so better MPG Easier to go deep off road Less tires so it's cheaper to buy tires Easier to maneuver and back up More desirable in the Vintage Trailer World
Cons:
They tend to bounce more They tend to sway more Typically the unit will be small

I like small and single axle. More my idea of what a vintage camp trailer is.

Some provinces or states have different rules about the requirement for brakes/brakes on how many axles. Not sure if these are commercial rules only or not. I believe there more than one kind of dual axle suspension which will have different characteristics.
Short story is more axles equals more weight capacity. It would IMO need to be a very small dual axle to tow with something smaller than a full size tow rig.

Also toll roads usually charge by the axle. Tandem axles are usually found on trailers over 18 feet.

I cured the sway with a sway bar. Wow... is it solid now!!! Mine is a 19' Deluxe. I'm sooooo happy with that decision
